BBQ beef brisket is the crown of American barbecue: from very slow braising the tough brisket turns butter-soft and flaky. It is a game of patience, but well worth it.
1. Season the 1.2 kg beef brisket with salt and pepper and brown it all over in the 2 tablespoons hot oil.
2. Add the cubed 1 onion and the 3 cloves garlic.
3. Brush it with the 200 ml barbecue sauce and sprinkle over the 2 tablespoons brown sugar.
4. Pour in the 300 ml stock, cover and braise in a 150 °C oven for 3.5-4 hours.
5. After cooking, let it rest, then slice it across the grain (perpendicular to the fibres).
Tip: It is done when the meat pulls apart easily with a fork – with brisket the long cooking time cannot be skipped.
