1. Stir the quark with the eggs, sugar, vanilla sugar, lemon zest and a pinch of salt until smooth.
2. Add the flour mixed with baking powder and stir into a sticky dough that can be shaped with a spoon; rest for 10 minutes.
3. Heat the oil in a deep pan to about 170 °C (small bubbles form around the handle of a wooden spoon).
4. Using two wet teaspoons, drop walnut-sized balls into the hot oil and fry for 4-5 minutes, turning occasionally, until evenly golden - they often turn by themselves.
5. Lift them onto kitchen paper with a slotted spoon and drain briefly.
6. Roll them in cinnamon sugar while still warm and serve immediately.
