1. Chill the apple juice and sparkling water for at least 1 hour - a spritzer is only truly refreshing when it's ice-cold.
2. Wash the apple, remove the core and cut it into thin wedges for garnish.
3. Put ice cubes into the glasses and half-fill them with apple juice.
4. Slowly top up with the well-chilled sparkling water, pouring down the side of the glass - the classic ratio is 1:1.
5. Stir once, gently, so the bubbles stay.
6. Garnish with apple wedges and mint leaves and serve immediately.
Tip: Cloudy (unfiltered) apple juice makes a fuller, fruitier spritzer; if you like it less sweet, add more sparkling water.
