1. Peel the potatoes, cut them into sticks, soak them in cold water for 15 minutes and pat them completely dry.
2. Toss with oil and salt, spread on a lined baking tray and bake in a 220 °C oven for about 30 minutes, turning once, until crisp.
3. For the sauce, sweat the finely chopped onion in a little oil, add the tomato purée, curry powder and paprika and fry for 1 minute.
4. Add the ketchup, sugar and vinegar and simmer for 5 minutes until thick; blend smooth with a stick blender.
5. Fry the sausages in a pan until golden, then slice them diagonally.
6. Pour the hot sauce over the sausage, dust with curry powder and serve with the fries.
Tip: Soaking washes out the starch - that's what makes the fries properly crisp even in the oven.
