The classic garlicky gypsy-style pork steak with crisp, spiced potato wedges – a filling, one-pot main course.
1. Cut the pork neck into slices about 2 cm thick, pound them lightly, then salt and pepper both sides.
2. Crush the garlic, mix it with the lard and a little paprika, then rub the meat slices thoroughly with it. While the potatoes bake, let it rest.

3. Wash the potatoes thoroughly (they can be baked in their skins), and cut them into larger wedges. In a bowl toss them with the oil, salt and paprika.
4. Spread them onto a baking tray, and in an oven preheated to 200 °C bake them golden and crisp on the outside in about 30-35 minutes.
5. Meanwhile slice the bacon thinly, and fry it crisp in a pan, then set it aside.
6. In the remaining fat fry the pork neck slices golden on both sides, 4-5 minutes per side.
7. Serve the gypsy-style pork steak with the hot potato wedges and the crisp bacon.
Tip: The meat turns even more tender and flavourful if you put it in the fridge with the garlic marinade for a few hours.
