A light, summery green bean soup, which is best made from fresh green beans.
1. Chop the onion finely and sweat it glassy in the oil.
2. Add the crushed garlic, the sliced carrot and the cut-up green beans, then toss it together.
3. Stir in the paprika quickly, so it does not turn bitter, then pour in the water.
4. Cook the vegetables tender, in about 20-25 minutes.
5. Salt and pepper it, then finally sprinkle over plenty of chopped parsley, and serve.
