1. Mix the minced meat with the rice, the egg and salt; work it only until it just comes together.
2. With wet hands loosely shape it into walnut-sized balls.

3. In a pot bring the tomato juice to the boil, and season it with salt.
4. Drop the meatballs one by one into the simmering sauce.
5. Cook them over a low heat, at just a gentle simmer, and do not stir hard, so the meatballs do not break up.
6. During cooking the meatballs soften and swell, and the sauce thickens.
Tip: The rice in the meatball swells during cooking, so shape them smaller than you would think.
