1. Cut the fried tofu into 2-3 cm cubes; if it isn't crisp enough, quickly brown it on all sides in the oil and lift out.
2. Finely chop the shallots and dice the tomatoes.
3. In the same oil soften the shallots, add the tomatoes and cook over medium heat for 5-6 minutes, pressing with a spoon, until they break down into a sauce.
4. Add the fish sauce, sugar and water and boil for 2 minutes.
5. Add the tofu, turn gently and simmer for 5 minutes so it takes on the flavour of the sauce.
6. Sprinkle with pepper and sliced spring onion and serve with rice.
Tip: A cheap, quick and filling northern home dish, a classic Vietnamese "weeknight supper". For a vegan version swap the fish sauce for soy sauce; ripe, fleshy tomatoes work best.
