1. Slice the cabbage very thinly, rub it with the salt in a bowl and leave for 10 minutes to soften slightly.
2. Coarsely grate the carrots, slice the pepper and celery thinly and chop the parsley.
3. Squeeze the released liquid out of the cabbage.
4. Mix it with the carrots, pepper, celery and parsley.
5. Drizzle with the vinegar and olive oil, sprinkle with the chilli flakes and toss thoroughly.
6. Chill for at least 30 minutes so the flavours come together, and serve alongside roast meat or grilled fish.
Tip: "Politiki" refers to the dishes of the Greeks of Constantinople, who brought them to Greece in the early 20th century. It gets even better after a few hours in the fridge.
