1. Pick over the blueberries, rinse them and pat dry on kitchen paper.
2. In a bowl, roughly crush half the blueberries with a fork and one tablespoon of honey to make a lovely purple sauce.
3. In another bowl, whisk the skyr with the milk until smooth and creamy.
4. Layer into four glasses or bowls: half the creamy skyr at the bottom, then the crushed blueberry sauce, then the rest of the skyr.
5. Scatter the whole blueberries on top.
6. Drizzle with the remaining honey and serve cold straight away.
Tip: Skyr has been a staple of Icelandic cooking for over a thousand years: a thick, tangy dairy product rather like quark, very high in protein and low in fat. Icelanders eat it for breakfast thinned with milk or cream, with a little sugar and wild bilberries. If you can't find skyr, thick Greek yogurt is just as delicious.
