1. Peel the potatoes, dice them, and cook them tender in salted water.
2. Strain them, and let them steam for a few minutes, so they do not stay watery.
3. Meanwhile cut the onion into half rounds, and in the fat, over a low heat, start frying it.
4. Do not rush it: let the onion caramelise slowly to a nice golden brown.
5. Roughly mash the potatoes, add the fried onion and part of the fat, salt and pepper it.
6. Just fold it together, do not overmix, so it stays chunky and rustic.
