1. Wash the tomato peppers, core them, and cut them into thin strips.
2. Mix the water with the vinegar, the sugar and the salt, until the sugar dissolves completely.
3. Toss the pepper strips with the vinegar liquid.
4. Put it in the fridge for a few hours, so the flavours come together well.
5. Serve it well chilled, cold.
Tip: If you cut the pepper into thinner strips, the vinegar liquid penetrates it faster, and it matures sooner and more evenly.
