Simple fried sausage is really good when it stays crackling outside and juicy within.
1. Do not prick the sausage, so its juices stay in. It can be made in a pan or in the oven alike.
2. Start frying it in a little fat or oil over a medium heat, so the inside heats through too, then brown it all over on a higher heat at the end.
3. Cut the onion into rings and fry it lightly caramelised, separately or alongside the sausage.
4. Turn the sausage now and then so every side cooks evenly, and season with pepper.
5. Serve with fresh bread.
Tip: Do not prick the sausage during frying – with the escaping juices its succulence would be lost too.
