1. Mix the flour, baking powder, sugar and salt in a bowl.
2. In another bowl whisk the yoghurt, milk and egg until smooth, pour into the flour mixture and stir just until most of the lumps disappear – you want a thick, slowly flowing batter.
3. Rest for 10 minutes; meanwhile toast the walnuts in a dry pan and chop roughly.
4. Heat a little oil in a frying pan and drop in tablespoons of batter to form small pancakes of 5-6 cm.
5. Cook over medium heat for 1.5-2 minutes per side until golden, turning when bubbles appear on top; add more oil as needed.
6. Serve warm, drizzled generously with honey and sprinkled with walnuts and cinnamon.
Tip: Tiganites are Greek grandmothers' Sunday breakfast – the name comes from "tigani" (frying pan). Serve them with crumbled feta and thyme instead of honey for a savoury version.
