1. Bring 1 litre of water to the boil in a saucepan.
2. Add the mountain tea stems (break them in half if they're long) and the cinnamon stick.
3. Cover and simmer gently over low heat for 5 minutes – Greeks don't just steep mountain tea, they briefly boil it.
4. Take off the heat and leave covered for another 5 minutes.
5. Strain and pour into cups.
6. Sweeten with honey and serve with a slice of lemon; in summer it's also lovely cold, over ice.
Tip: Sideritis is a wild herb of the Greek mountains, drunk against colds and digestive complaints. If you don't have a cinnamon stick, it's just as good without.
