Chicken parmesan is crisp breaded chicken with tomato sauce and lots of melting cheese – a favourite of Italian-American cooking.
1. Pound the chicken breast fillet thin, then salt and pepper it.
2. Toss it in flour, beaten egg, then breadcrumbs.
3. Fry both sides golden in hot cooking oil, then lift it onto paper towel.
4. Lay it in an ovenproof dish and drizzle it with the garlic-and-basil tomato passata.
5. Sprinkle over the mozzarella and the grated parmesan.
6. Bake at 200 °C until the cheese melts and browns golden; serve with pasta.
Tip: Thanks to the double coating the crust stays crisp even under the sauce.
