This Caesar salad is a filling version topped with roast chicken: crisp lettuce, golden bread cubes, roast chicken strips and plenty of parmesan. It is perfect for a light lunch or dinner.
For the meat:
1. Season the 300 g chicken breast with salt and pepper and fry it golden in a pan in a little oil, then, after resting, cut it into strips.
The croutons and the salad:
2. Cube the 3 slices of bread and fry them golden in the 3 tablespoons oil (with a crushed clove of garlic).
3. Wash the 1 head of romaine lettuce, dry it, and tear it into bite-sized pieces.
4. Toss it loosely with your favourite Caesar dressing, then add the roast chicken and the croutons.
5. At the end sprinkle over the 100 g grated parmesan.
Tip: Mix the croutons into the salad only when serving, so they stay crisp.
