Cauliflower cheese is a creamy, cheesy vegetable dish that holds its own as both a side and a main course.
1. Break the cauliflower into florets and cook it firm to the bite in salted water, then drain it and let it dry off.
2. Melt the butter, stir the flour into it, gradually pour in the milk, and cook a smooth, thick béchamel.
3. Off the heat, grate in the cheddar and the parmesan, then season with nutmeg, salt and pepper.
4. Put the drained cauliflower into an ovenproof dish and pour over the cheese sauce.
5. Bake at 200 °C until golden and bubbling.
Tip: A classic British side for roasts, but with fresh bread it is a filling dish in its own right too.
