Rhubarb crumble is the simple, warm fruit dessert of British cooking: tangy fruit underneath, crisp crumble on top.

1. Wash the rhubarb, and cut it into 2-3 cm pieces.
2. Toss it with half of the sugar, and put it into an ovenproof dish.

3. To the flour add the remaining sugar and the cinnamon.
4. Rub the cold butter into it, until it is a crumbly texture.
5. Stir in the oats, then scatter it evenly over the rhubarb.
6. Bake it at 190 °C for 30-35 minutes, until the top is golden brown and the fruit bubbles.
Tip: The oats give an extra crunch; serve it warm, even with a scoop of ice cream.
