1. Mix the wheat flour, the eggs, the milk and the salt completely smooth, then rest the batter for at least 30 minutes.
2. Heat the oven to 230 °C, and put a spoonful of duck fat into each well of a muffin tin.
3. Push the tin into the oven, and heat it until the fat starts to smoke – this is essential for a high rise.
4. Quickly pour the batter into the hot fat, filling each well two-thirds full.
5. Push it back into the oven immediately, and bake it for 20-22 minutes.
6. During baking NEVER open the oven door – the pudding would collapse. Serve it warm, beside roast meat and gravy.
