1. Season the fish fillets with salt and pepper, drizzle with the lemon juice and leave for 15 minutes.
2. Slice the onions into thin rings and the garlic thinly, and soften them in half the oil for 8-10 minutes.
3. Add the diced tomatoes and half the parsley, pour in the white wine, season and simmer for 10 minutes to thicken slightly.
4. Spread half the sauce in a baking dish, lay the fish on top and cover with the rest of the sauce; top with lemon slices and drizzle with the remaining oil.
5. Bake at 190 °C for 25-30 minutes, until the fish flakes easily and the edges of the sauce are lightly caramelised.
6. Sprinkle with the rest of the fresh parsley and serve with the sauce.
Tip: Plaki is the Greek name for dishes baked with olive oil and tomatoes – it's made with beans as well as fish. Cod, hake or sea bream all work well.
