Salisbury steak, a beef patty in onion-and-mushroom sauce, is American comfort food: a browned meat patty served in a rich onion-and-mushroom gravy.
Meat patties
1. Knead the minced beef thoroughly with the breadcrumbs, the egg, the grated onion, salt and pepper.
2. Shape it into oval patties about 1.5 cm thick.
3. In a pan heat oil, and over a high heat brown the patties on both sides, then take them out onto a plate.
Onion-and-mushroom gravy
4. In the remaining fat sweat the diced onion glassy, then fry the sliced button mushrooms golden brown too.
5. Sprinkle over the wheat flour, stir it in, and gradually pour in the meat stock. With constant stirring boil it into a creamy gravy.
6. Put the meat patties back, and in the gravy, covered, over a low heat, braise them for 8-10 minutes, so the sauce soaks through them.
Tip: The moisture of the onion grated into the meat makes the patties juicier and softer too.
