Fried onion dumplings are a tasty, filling side even on their own, and go with any juicy meat.
1. Mix the flour with the eggs, the salt and enough water to get a thick, bubbly dumpling batter.
2. In a large pot bring plenty of salted water to the boil.
3. Drop the batter into the boiling water with a dumpling grater or a wet knife.
4. When the dumplings rise to the surface, cook them a further 1-2 minutes, then strain and drain them.
5. Cut the onion into thin slices, and in the lard, slowly, fry it golden.
6. Toss the dumplings with the fried onion, and pepper it to taste.
Tip: It is an excellent side for roast meats and stews – fry the onion patiently, as slowly caramelised onion is the tastiest.
