1. Dice the aubergine, salt it, leave for 20 minutes, then squeeze it dry.
2. Cut the lamb into 2 cm cubes and brown it in a large pot in half the olive oil; add the chopped onion and tomato purée, fry for 2 minutes, then add 300 ml of water and simmer covered for 40 minutes.
3. Meanwhile cut the courgettes, potatoes and peppers into large dice and the green beans into 3 cm pieces, and grate the tomatoes.
4. Layer the vegetables on top of the meat (potatoes and beans at the bottom, aubergine and okra on top), season, and pour over the grated tomato and the remaining oil.
5. Cook covered, without stirring, over low heat for 35-40 minutes until all the vegetables are tender.
6. Let it rest a little and serve with rice pilaf or bread.
Tip: Türlü means variety – at the end of summer everything from the garden goes in. The okra can be left out; add more green beans instead.
