Lamb kofta is a favourite spiced meat stick of Middle Eastern and British cooking: grilled bites shaped from curried, parsleyed minced lamb. It is best with flatbread and a yoghurt dip.
1. Mince 500 g of lamb (or use ready-minced lamb).
2. Knead it together with 1 grated onion, 2 crushed garlic cloves, 1 teaspoon of curry powder, the finely chopped parsley, 40 g of breadcrumbs, salt and pepper.
3. With wet hands shape it into long sticks (you can thread them onto skewers too).
4. In 2 tablespoons of hot oil or on a grill cook them all round, until they take on a nice colour and are cooked through.
5. Serve with a yoghurt dip and flatbread.
Tip: Rest the mixture in the fridge for half an hour – this way it is easier to shape and does not fall apart during cooking.
