Flekken is pork neck matured in a spiced, garlicky marinade, grilled crisp – a classic of outdoor cooking.
1. Pound the pork neck slices lightly with a meat mallet, so they are of even thickness.
2. Mix the crushed garlic with the oil, the caraway and the paprika into a creamy marinade.
3. Brush the meat slices thoroughly on all sides with the marinade, and put them in the fridge to rest for at least 1 hour (or even overnight).
4. Before cooking salt and pepper them, then on a good hot grill rack or in a grill pan cook them for 4-5 minutes per side – the edges should curl a little and brown.
5. Serve fresh and hot.
Tip: Cooked over charcoal embers it takes on its most characteristic, smoky flavour – but wait to salt it until cooking, as salt draws the moisture from the meat too soon.
