1. Chop the onion finely, and sweat it glassy in a little oil.
2. Pour in the tomato juice, and add the sliced celery stalk.
3. Season it with sugar, salt and pepper – the sugar rounds off the acidity of the tomato.
4. Over a low heat cook it for about 20 minutes, so the flavours come together.
5. Serve it strained or together with the vegetables, and sprinkle the top with fresh chopped parsley.
Tip: If you want a silkier soup, you can blend it smooth with a stick blender at the end of cooking.
