Tomato rice is a simple yet good-looking side dish that holds its own on its own too.
1. Chop the onion finely, and sweat it glassy in the oil.
2. Add the rice, and fry it glassy for a few minutes, stirring.
3. Pour in the tomato juice and the water, then stir it.
4. Salt and pepper it, and covered, over a low heat, steam it tender, until it absorbs the liquid.
5. Take it off the heat, rest it covered for a few minutes, then serve it loosened with a fork.
Tip: It is especially good beside meatballs and breaded fried meat.
