Pasta with cabbage is a simple yet heavenly grandma's recipe: the perfect pairing of sweetish-fried cabbage and pasta.
1. Grate the head of cabbage (700 g), salt it, and leave it to stand for 20 minutes, so it releases its liquid.
2. Squeeze it out well by hand, then in the lard (2 tablespoons), together with the sugar (2 tablespoons), fry it slowly golden brown, slightly caramelised – this can take even 20-25 minutes, but it is worth it.
3. Meanwhile cook the square-cut pasta (500 g) in plenty of salted water.
4. Strain the pasta.
5. Toss it together with the fried cabbage.
6. Sprinkle it generously with freshly ground pepper.
7. Serve it immediately, warm.
Tip: The slightly caramelised cabbage gives the dish its distinctive, sweetish flavour – do not begrudge it the time and patience.
