1. Toast the sesame seeds in a dry frying pan over medium heat for 3-4 minutes, shaking constantly, until golden and fragrant, then let cool on a plate.
2. Lightly crush the dried thyme and oregano in a mortar or spice grinder, but don't grind them to a powder.
3. In a bowl, mix the thyme, oregano, sumac and salt.
4. Add the cooled sesame seeds and mix well, keeping the seeds whole.
5. Transfer to an airtight jar and store in a dark, cool place.
6. Mix with olive oil and spread on bread or manakish, or sprinkle over labneh, salads or roasted vegetables.
Tip: Za'atar is both the name of a wild thyme-like herb and of the Levantine spice blend made from it; sumac gives it its lemony tang. Every family swears by its own proportions, so feel free to experiment. It is most fragrant when fresh, within 2-3 months.
