1. Peel the ube, boil until soft, mash with a fork and cook with 2 tablespoons of sugar over low heat into a thick jam (ube halaya); let cool.
2. Slice the plantain and simmer with the brown sugar and water for 8-10 minutes until syrupy, then cool.
3. Simmer the cooked red beans with the remaining sugar for 5 minutes until sweet and syrupy, then cool; cut the jackfruit into strips.
4. Crush the ice cubes in an ice shaver or blender to fine shaved ice.
5. Layer the beans, plantain and jackfruit in the bottom of tall glasses, pile the shaved ice on top and drizzle with the milk and sweetened condensed milk.
6. Top each with a spoonful of ube halaya and serve immediately – mix everything together before eating.
