1. Peel the plantains and cut them lengthways into quarters; slice the jackfruit into thin strips.
2. Place a banana strip and a few jackfruit strips on each spring roll wrapper and sprinkle with a little brown sugar.
3. Fold the bottom edge over the filling, tuck in the sides and roll up tightly; seal the end with a little water.
4. Heat the oil in a deep pan to 170 °C and fry the rolls over medium heat for 2-3 minutes until golden.
5. Now sprinkle the remaining brown sugar into the oil; as it melts and caramelises, roll the turon in it so they get a glossy caramel coating.
6. Lift onto baking paper, let cool slightly so the caramel sets and serve warm.
Tip: A favourite afternoon street snack (merienda) in the Philippines. Careful, the caramel is very hot – wait a few minutes before biting in; also great with vanilla ice cream.
