1. Bring the sugar to the boil with 200 ml of the water in a small pan until fully dissolved, then cool – this is your sugar syrup.
2. Wash the calamansi, halve them and squeeze over a sieve so the seeds don't get into the juice.
3. In a jug mix the calamansi juice with the cooled syrup and the remaining cold water.
4. Taste and adjust with more water or syrup – it should be refreshingly tart.
5. Fill the glasses with ice cubes and pour over the juice.
6. Garnish with a few halved calamansi and mint leaves and serve at once.
