1. Soak the white beans overnight, cook them the next day until tender (about 1 hour), drain and cool; or rinse 2 tins of beans.
2. Hard-boil the eggs for 10 minutes, peel and quarter them.
3. Slice the red onion into thin half-moons and rub with the sumac and a pinch of salt.
4. Mix the vinegar, olive oil, chilli flakes and salt.
5. Toss the beans with the onion, finely chopped parsley, diced tomato and the dressing.
6. Pile onto a platter, garnish with the egg quarters and serve with köfte.
Tip: Piyaz is köfte's faithful companion, especially in köfte houses. In Antalya they make it with a tahini dressing – try that too!
