1. Dice the tomato, shred the cabbage very finely and chop the red onion.
2. Beat the eggs with the salt and stir in half the vegetables.
3. Heat half the oil in a frying pan, pour in half the egg mixture and cook a thin, chapati-sized omelette for 2 minutes; lay one chapati on top and after 30 seconds flip both together.
4. Cook the other side for 1 minute so the chapati warms through and browns slightly.
5. Slide onto a board with the omelette facing up, scatter over half the remaining fresh vegetables and roll up tightly.
6. Make the second rolex the same way and serve warm, wrapped in paper.
Tip: The rolex (short for rolled eggs) is Uganda's best-known street food: popular for breakfast, lunch and as a late-night snack, it has even had its own festival since 2016. A tortilla works instead of chapati; you can also roll bell pepper or avocado into it if you like.
