Stovies is a traditional Scottish one-pot dish: a simple yet filling combination of meat braised tender and potato that falls apart.
1. Cut the beef into cubes, and in hot oil brown it all round, so it takes on colour.
2. Add the thickly sliced onion, and sweat it glassy.
3. Cut the potatoes into thick slices, and layer them over the meat.
4. Pour in enough meat stock almost to cover it.
5. Covered, over a low heat, braise it for 45-50 minutes, until the edges of the potato fall apart and thicken the juices.
6. Season it with salt and pepper. Traditionally it is served with fresh bread.
Tip: A real Scottish "leftover dish" – with leftover roast meat it comes together even faster and tastier.
