1. Take the fillet out of the fridge 30 minutes before cooking and rub with salt and pepper.
2. Heat the oil in a heavy frying pan over high heat and sear the beef for 1 minute on each side, 5-6 minutes in total, until crusted – the inside stays raw.
3. Plunge it immediately into iced water for 1 minute to stop the cooking, then pat dry, wrap in cling film and chill for 30 minutes.
4. For the dressing, mix the soy sauce with the lemon juice and grated garlic; finely grate the daikon and ginger and thinly slice the spring onion.
5. Cut the beef into 5 mm slices with a sharp knife and fan them out on a plate.
6. Drizzle with the dressing, pile grated daikon, ginger and spring onion on top and serve cold.
Tip: "Tataki" means "pounded": spices used to be patted into the meat. Only make it with very fresh, good-quality fillet, as the inside stays raw.
