1. Preheat the oven to 200 °C.
2. Squeeze the chorizo out of its casing and fry it in a small ovenproof (cast-iron) pan without fat for 5-6 minutes until crisp; lift out half.
3. Pull apart or grate the cheese and pile it onto the chorizo left in the pan. If you have no Oaxaca cheese, mozzarella (ideally the drier kind for pizza) works too.
4. Scatter the reserved chorizo on top and bake for 8-10 minutes until the cheese has melted completely and is slightly browned at the edges.
5. Meanwhile, warm the tortillas in a dry pan and keep them warm wrapped in a tea towel.
6. Put the hot pan on the table; everyone scoops the stretchy cheese into a warm tortilla, with salsa.
Tip: Eat it quickly while it's still stretchy – if the cheese sets, put it back in the oven for a few minutes.
