1. Mash the feta with a fork and mix it with the chopped parsley, half the egg and a little pepper.
2. Cut the yufka sheets into eight wedges (triangles).
3. Place a little-finger-sized strip of filling at the wide end of each triangle, fold in the sides and roll up tightly into a thin cigar.
4. Brush the tip with the remaining beaten egg so the roll stays closed.
5. Fry the rolls in hot oil for 2-3 minutes until golden and drain on kitchen paper.
6. Serve warm with tea or ayran.
Tip: Yufka is the thin Turkish pastry sheet; if you can't find it, use a double layer of filo. You can freeze the rolled cigars raw and fry them straight from frozen.
