1. Cut the potatoes into chips, soak in cold water for 20 minutes, dry thoroughly, pre-fry in oil at 160 °C for 5-6 minutes, then fry at 180 °C until crisp just before serving and salt.
2. Slice the onions into thin half-moons and cook in 2 tbsp oil in a frying pan over low heat, stirring occasionally, for 20-25 minutes until soft and golden (cebolla frita).
3. Cut the sirloin into 4 thick (about 2 cm) steaks, season with salt and pepper and leave at room temperature for 15 minutes.
4. Sear in a very hot pan with a little oil for 3-4 minutes per side (medium); rest for 5 minutes so the juices settle.
5. Meanwhile fry two eggs per person, with runny yolks.
6. Make a bed of chips on each plate, add the fried onions, then the steak, and top with the two fried eggs.
Tip: The name "poor man's style" is ironic: it's one of Chile's most generous dishes – a little pebre or chilli sauce freshens it up nicely.
