1. Cook the rice in lightly salted water for 12-14 minutes until tender, drain and let cool.
2. Fry half the mince with the finely chopped onion in a dry pan until all the liquid has evaporated, then let cool.
3. Knead the fried mince with the raw mince, the rice, the crumbled feta, cumin, salt and pepper until smooth and cohesive.
4. With wet hands, shape into palm-sized flattened ovals.
5. Dredge the patties in flour, dip them in beaten egg and fry in plenty of hot oil for 3-4 minutes on each side until golden.
6. Drain on kitchen paper and serve warm with salad or roasted vegetables.
Tip: The name means lady's thigh, after their shape. The combination of cooked and raw meat gives them their especially tender centre; chilling the patties before dipping them in egg makes them easier to fry.
