Description

Pierogi are the stuffed dumplings of Polish cooking, which with their soft dough and creamy filling are true comfort food.

The dough

1. Knead the flour with the egg, a pinch of salt and enough lukewarm water to get a smooth, elastic dough.

2. Cover it and rest it for 30 minutes, so it is easier to roll.

The filling

3. Cook the potatoes, mash them, then mix them creamy with the curd cheese and salt.

The assembly

4. Roll the dough out thin, and cut circles from it with a glass.

5. Put a spoonful of filling onto each circle, fold it in half, and press the edges down well with a fork.

6. Drop them into plenty of boiling salted water; they are done when they rise to the surface of the water.

Tip: A well-sealed edge is the secret to the dumplings not opening during cooking.
