The Philly cheesesteak is the iconic street food of Philadelphia: thinly sliced beef, melting cheese and fried onion in a crisp baguette.
1. Firm the beef tenderloin up a little in the freezer, then cut it into very thin slices – this is what makes it really tender.
2. Cut the onion and the tomato pepper into strips, fry them in hot oil, then set them aside.
3. In the same pan, over a high heat, quickly fry the thin beef slices through.
4. Put the vegetables back, salt and pepper it, and toss it together.
5. Layer the provolone cheese onto the meat, and let the residual heat melt it on.
6. Fill the cheesy meat into a lengthways-cut, lightly toasted baguette.
Tip: Sliced thin and fried quickly over a high heat, the meat stays juicy – long cooking dries it out.
