1. Whisk the eggs with the sugar until frothy.
2. Add the flour, ground cardamom and half the milk and stir until smooth; then work in the remaining milk and the sour cream to make a smooth batter.
3. Melt the butter, let it cool slightly and stir it into the batter; let it rest for at least 15 minutes so the flour can swell.
4. Heat the waffle iron, brush it lightly with butter and pour in a ladleful of batter.
5. Bake for 2-3 minutes until golden, then place on a rack so they don't go soggy; bake the rest the same way.
6. While warm, top with thin slices of brown cheese cut with a cheese slicer and serve at once.
Tip: In Norway, vafler are a must at weekend coffee time and on ski trips, and mountain cabins often bake them on the spot. Brown cheese (brunost) is made from caramelised whey, so it's sweet with a caramel flavour - it melts slightly on the warm waffle, and that's the whole point. If you can't find brunost, sprinkle a soft goat's cheese with a little brown sugar, or simply serve with jam and sour cream.
