1. Toast the pine nuts in a dry pan until fragrant; roughly chop half and set the other half aside for garnish.
2. In a bowl, mix the minced beef and pork with the soy sauce, honey, grated garlic, finely chopped spring onion, sesame oil, pepper and the chopped pine nuts.
3. Knead the mixture vigorously for at least 5 minutes, slapping it against the bottom of the bowl, until sticky – this makes the patties firm and juicy.
4. With wet hands, shape 8 flat oval patties about 1.5 cm thick and chill for 15 minutes.
5. Fry in the oil in a pan over medium heat for 4-5 minutes per side, then pour in the mixed soy sauce, honey and water and turn the patties until coated in a shiny glaze.
6. Sprinkle with the remaining pine nuts and serve with rice and fresh salad.
Tip: The name means "rice cake ribs": at the royal court, galbi was made tender this way for elderly kings, and the shape resembles tteok. If you cook them on a grill, brush on the glaze only at the end.
