1. Preheat the oven to 220 °C. Clean the scallops and wash the deeper half of the shells – you'll bake them in these.
2. Cook the finely chopped onions in the olive oil over low heat for 12-15 minutes until soft and sweet.
3. Add the finely chopped serrano ham, fry for 2 minutes, take off the heat and stir in the smoked paprika; pour in the white wine and let it bubble for 2 minutes.
4. Put a little of the onion mixture in each shell, add a scallop and top with more of the onion mixture.
5. Sprinkle with breadcrumbs and parsley, drizzle with a drop of olive oil and bake for 8-10 minutes until golden on top.
6. Serve hot in the shells.
Tip: The scallop shell is the symbol of the Way of St James – if you don't have shells, bake them in small earthenware dishes.
