1. Peel the casing off the sucuk and slice the sausage into 3-4 mm rounds.
2. In a small pan (sahan), melt the butter and spread the sucuk slices in one layer.
3. Fry over medium heat for 1-2 minutes until they release their red, spiced fat and the edges curl slightly.
4. Carefully crack the eggs over the sucuk.
5. Cover and fry for 3-4 minutes until the whites are set but the yolks still runny; add pepper and a pinch of chilli flakes.
6. Serve hot in the pan with fresh bread.
Tip: The star of the Turkish weekend breakfast (kahvaltı). Sucuk is salty, so you don't need to salt the eggs; mop up the spiced fat with bread.
