1. Soak the bread and squeeze it out; grate the onion finely and chop the parsley.
2. Knead the minced beef with the bread, onion, egg, oregano, parsley, salt and pepper, then chill for 20 minutes.
3. Cut the feta into 8 small sticks.
4. Divide the mixture into 8, flatten each into a palm-sized disc, place a piece of feta in the centre and fold the edges over to form an oval patty – the cheese must be fully enclosed.
5. Brush the patties with oil and cook on a hot grill or in a frying pan for 5-6 minutes per side until cooked through and the feta has melted inside.
6. Serve with tomato salad, chips or pitta.
Tip: Bifteki is a Greek taverna favourite; the juice from the grated onion keeps it moist. If you grill them, don't press them with the spatula or the cheese will run out.
