The secret of gyros is the spiced marinade and the meat cooked quickly over high heat – this way it is browned outside and juicy within.
1. Cut the chicken breast into thin strips.
2. Mix a marinade from the oil, the crushed garlic, the oregano and the paprika, season it with salt and pepper, then turn the meat thoroughly through it.
3. Marinate it in the fridge for at least 1-2 hours, or even overnight, so the flavour soaks in.
4. In a good hot pan or on a grill, spread over just a little of the surface, cook it quickly through, so it browns outside and stays juicy inside.
5. Meanwhile slice the tomato and the cucumber, and warm the pita lightly.
6. Fill the pita with the meat, add the fresh vegetables, and serve at once, hot.
Tip: The meat browns nicely only if you do not overcrowd the pan – cook it in several batches, or it starts to steam.
