The enchilada is a Mexican comfort dish: tortilla rolls filled with spiced, juicy chicken, covered with tomato sauce and gratinated with cheese.
Filling
1. Cook or fry the chicken breast, then shred it into strands with two forks.
2. Chop the onion very finely and mix it into the still-warm, shredded chicken.
3. Season with salt, spice it hot and spicy with the chilli, and toss it with half the tomato sauce so it is juicy.
Assembly
4. Divide the filling among the tortillas and roll each one up tightly.
5. Lay the rolls side by side, packed tightly, seam-side down in a baking dish.
6. Pour the remaining tomato sauce evenly over them and sprinkle with the grated cheese.
7. Bake in a preheated 200 °C oven until the cheese melts and lightly browns (about 15-20 minutes).
Tip: Pack the rolls tightly side by side in the dish – this way they do not unroll during baking, and the sauce embraces every one of them.
